First, peel the yam, cut it into small pieces, and put it in a blender. Also, add water, oil, and flaxseed flour. Blend everything well for 3 minutes until you get a homogeneous mixture.
Then, transfer to a bowl and add the cassava starch, oat flour, and salt. Mix well again until smooth.
Heat a non-stick skillet over medium heat, no need to grease. Pour the batter and spread it like a regular pancake. It shouldn’t be too thick, or it might remain raw inside. When it starts to come off the skillet, flip it with a spatula and let it brown on the other side.
Repeat this process until all the batter is used. Then fill it with your preferred filling. It’s an excellent option for a balanced diet.
Butternut Squash Soup with Ginger and Turmeric
Ingredients
- 2 cloves of garlic
- ½ onion
- ¼ butternut squash
- 2 teaspoons of ginger
- 2 teaspoons of olive oil
- 1 teaspoon of salt
- ½ teaspoon of turmeric
Preparation
Chop the garlic, onion, and ginger. Next, peel the butternut squash and cut it into small cubes. In a large skillet, heat the oil over medium heat and sauté the garlic, onion, and ginger until lightly golden.
Then add the turmeric powder and mix for 30 seconds. Next, add the squash, increase the heat, and add water until the squash is covered.
Then cover the pan and wait for it to boil. After boiling, add salt, mix, and cover again. This time, reduce the heat to medium and cook for 5 to 10 minutes. After the time is up, poke the squash with a fork to see if it’s cooked through.
Now, transfer to a blender and blend until smooth. If necessary, you can add a little more water. Finally, taste it and adjust the salt if necessary.

Microwave Fit Brownie
Ingredients
- 1 tablespoon of sugar
- 1 egg
- 1 tablespoon of unsalted butter
- 3 squares of 70% cocoa chocolate
- 1 tablespoon of 100% cocoa powder
- 1 tablespoon of rice flour
Preparation
In a microwave-safe mug or bowl, crack the egg and beat it with a fork. Add the butter, sugar, cocoa, rice flour, and mix everything well. Then add the chopped chocolate so it sits on top of the batter. Microwave for about 1 to 2 minutes. Then serve and enjoy this treat!

Mousse Ingredients
- ½ cup of warm water
- 1 cup of powdered milk
- 2 containers of plain yogurt
Syrup Ingredients
- 1 tablespoon of xylitol
- Pulp of 1 passion fruit
Mousse Preparation
Mix the powdered milk with water in a blender. Then add the plain yogurt, passion fruit juice, and xylitol. Place the mixture in a bowl.
Syrup Preparation
Mix the xylitol and passion fruit pulp. Place in a saucepan and heat until thickened. Then pour the syrup over the mousse, and it’s ready!
Apple Delight with Cinnamon and Sour Cream
Ingredients
- 1 teaspoon of xylitol
- Cinnamon to taste
- 1 apple
- 100 ml of fresh cream
- Coconut oil for greasing
Preparation
Grease a skillet with coconut oil, and add the chopped apple and cinnamon. Cook over low heat until it starts to brown. When this happens, add the xylitol and cream and wait for it to thicken slightly. Then turn off the heat.
It can be eaten hot or cold. If you prefer, you can put it in the freezer for 15 minutes.
